Valentines Peppermint Creams


 No bake vegan recipe


I vividly remember the taste of peppermint creams as a child. Super sharp mint with the soft, sweet icing sugar. I've been craving them for a while but couldn't get my hands on a vegan version.


Valentine's day seemed like the perfect opportunity to have a little experiment and I've managed to make the cutest marble effect peppermint hearts. I'm super happy with these and they were so easy! I don't own a weighing scale so all my measurements are in cups or spoons. There's plenty of conversion websites online if you're a grams kinda person.

I'm not going to pretend the marble effect was for anything other than looking cool on instagram but I think it gives my favourite 90's treat a cool 2018 vibe. 



Recipe:

1 cup of icing sugar sieved
1 and a half tablespoons of dairy free butter (I used flora)
Half a teaspoon of American peppermint extract 
2 drops of vegan friendly pink food colouring
  • Melt the butter and mix in a bowl with the icing sugar and peppermint extract until it starts to come together to form a dough
  • Add a tiny drop of food colouring and continue to mix in a figure of 8 motion
  • Add the rest of the food colouring when required
  • The trick to getting the marble effect is to add the food colouring sparingly and stop mixing before the entire mixture turns pink
  • Once happy you're happy with your pattern, use a rolling pin to roll the mixture until it's about 1cm thick and cut with your cutest heart cookie cutters

Leave in an air tight container to set overnight or eat the right away if you just can't wait.

New York City on a Budget

Free things to do in New York City NYC

The Big Apple is undoubtedly one of the most expensive cities to visit but you don't have to spend money on everything. There are plenty of unique things to see and do that won't cost a penny (or should I say a cent). So, if you're doing New York on a budget read on:

9/11 Museum & Memorial
I wouldn't recommend visiting New York without experiencing the 9/11 Museum. It was one of the most emotional places I've been to and I'd definitely go again on my next visit. Although there's usually an admission fee, if you go after 17.00 on a Tuesday it's absolutely free! I'd recommend arriving early though - such a popular attraction is bound to attract the crowds. If you're not able to make the free entry slot or are short on time then visiting the Twin Towers memorial garden is free of charge.


Watch a TV show recording.
If you fancy something a little different, you can bag yourself a ticket to watch a TV show being recorded at ABC studios. I did this on my visit to NY and there's a few tips I'd definitely recommend. No less than a month before you travel, keep an eye on available show tickets on 1iota. Once you've selected the ones you want make sure to read the FAQs. I went to watch a recording of The View and they specifically asked for audience members to be dressed in bright colours and to take a form of ID. The ticket states an arrival time around 2 hours before the recording starts but once you're inside the holding area there's a Starbucks you can grab a drink and some food at. You do have to pay though so be sure to pack your own snack if you'd rather. Overall it was a great experience, I couldn't recommend this enough and I'll do it again next time I visit.

The High Line is a 2.3km long disused train line elevated above the streets of New York. It spans across the West side from the Meatpacking district through Chelsea. On one side you'll see gorgeous views of  the Hudson River and on the City on the other (be sure to look out for the Empire State Building). Chelsea Market is an ideal stop off point to grab a bite to eat along the way but there's plenty of chairs and benches to relax on if you'd rather pack a picnic to eat whilst enjoying the views.


Brooklyn Botanical Gardens
Another attraction offering free admission on a Tuesday and a great one for people who love exploring nature. The different gardens offer plenty of variety and you'll feel a world away from the hustle and bustle of the city.
 


Sightseeing.
Although the subway is relatively cheap, pack a sturdy pair of walking shoes, open up Google maps and navigate your way around the city. You don't need to take a cab as many landmarks are situated fairly close. If you're travelling with children, why not buy a scratch off map to document each attraction they've seen or check out Pinterest for free printable maps of the city or bingo games. Times Square and Brooklyn Bridge are my two favourites.

30 before 30: the Bucket List Update

Two weeks ago I turned 26 and I’m clinging on to my mid-twenties with all my mite. Last year I posted a bucket list of goals to complete before I turn 30 so I thought now would be the perfect time to update my bucket list and check my progress.

1. See a West End show
Okay so I haven’t quite completed this one yet but I saw Chicago on Broadway last month which was definitely another dream of mine. It’s made me more determined to see a West End show, there’s just too much to choose from.




8. Run a race for charity 
I ran the 5k Race for Life last July and raised over £300 for Cancer Research. This charity is so close to my heart and seeing so many women affected by cancer first hand was inspiring. I finished the race was a personal achievement I feel so proud of but next time I’d like to run 10k and then bring on the half marathon.. maybe.

New York Photo Diary

 It's been over two weeks since I returned from a long awaited trip to New York and I'm still feeling the post-holiday blues. I can't believe I have actually been to the Big Apple and was lucky enough to experience all seasons. I took way over 1000 photos of the trip but I've compiled some of my favourites into this post just for you.. you lucky things.

The weather during our first few days was exactly how you'd imagine a New York winter. Bitterly cold yet sunny and we were lucky enough to have one very snowy Friday. We took a stroll through Central Park to experience it covered in white and couldn't help but be in awe of the winter wonderland that had appeared overnight. TV recordings are the perfect free activity on a cold day and we scored tickets to see The View. I was pretty stoked to see That's So Raven herself on the panel. The 90's kid inside me was uber happy. Throw in a John Stamos interview and surprise Naughty By Nature performance and our Friday morning was made!

I'm not the only one who can't believe it's April already am I?! Where the heck did the past three months go? I've got a few things on at the beginning of April but the second half of it is set to be chilled and in all honesty, I can't wait. I'm so happy to have completely free weekends to spend as I please. 

I'm going to start using the right hand column of the month to view page as a goals list. It should keep me on track and will be good to look back on at the end of each month. As I hadn't filled it in before taking this picture I'll leave a little list below of my April Goals..

Happy Birthday to me! I really wish my day was full of lunches out and relaxing with the family but unfortunately I have to work. I had a celebratory meal with my friends at the weekend though and then took a walk down the canal in the spring sun before having the most amazing profiterole gelato! Tonight I'll be heading to my parent's house for a family birthday tea. I love a good buffet with sandwiches, finger food treats and of course some jelly and ice cream.

The sticker of the cute little dog in the hat was part of a set from Poundland and the stickers on the left were from Ebay. These ones are particularly good quality, I'd say they were more suited for scrap booking as they're fairly thick but they're simple, cute and I highly recommend them.

So my local Poundland has started stocking craft supplies and when I saw packs of 3 washi tapes for £1 (obviously) I couldn't resist and bought one of each. 

Each set is somewhat colour themed and as you can see in the firt picture,they include a fair few glitter tapes which are probably my favourite to use in my planner. The silver and pink third and fourth from the top of this picture will be perfect for a mermaid theme so I'm now on the hunt for some Ariel stickers.

I also picked up some glitter card. I'm not sure what I'll use this for yet but I'm in the process of collecting bits and bobs to start some scrapbooks. I spotted some shaped hole punches in the shop too so I'm thinking glitter hearts will be my first project. These cards also come in packs of 3 and I'll definitely be going back to buy more.

I must say the quality of the washi tapes aren't amazing and if you're not careful some of them can break easily but I'd still recommend them, especially when you compare them with prices of washi tape at Hobbycraft etc.

Planner Layout: Frozen

I never know whether to post my planner layouts before or after I fill them in completely. I love seeing people's day-to-day's filled with errands and appointments but I'm always a bit uneasy when it comes to putting my entire week's plans online.

Anyway, I found a bumper pack of Frozen stickers in Poundland and then wandered into the craft section and saw they now sell washi tape in sets of three! That's where I picked up the blue glitter washi from -  it reminds me so much of Elsa's dress. I have a bit of a girl's weekend coming up with two birthdays so I used a cocktail sticker from The Plump Planner and the balloon came in a sticker set from Tiger. 

I think Disney themes might be the way forward, it really gets me excited for the week ahead. I think I'll be hunting for some more Disney planner stickers soon. As for the Poundland washi tape, I was fairly impressed so I'll do a haul soon (I bought a total of 9 rolls of tape).

Sunday Night Movies

You know that stage we get to on a Sunday evening where all our weekend chores are complete, we've had our lush bath and slipped into our freshly washed PJ's? Well each weekend this year I've been settling down with a dvd and mug of my favourite fruit tea. Here's what I've been watching/what I'll be watching in the upcoming weeks.


Clueless. This is where it all started really. The first Sunday after New Year I was in a bit of a rut and had tonnes of chores to do before work the next day. Early evening I decided to spend the night with Cher and the gang whilst ironing and before I knew it the post-Christmas Sunday night blues were gone. Total must see chick-flick filled with 90's nostalgia.



Ferris Bueller's Day Off. The story of one high school boy who's day off school with his friends surpasses all expectations. It's an 80's teen classic with a young Matthew Broderick.


500 Days of Summer. So I'll pretty much watch anything starring Zooey Deschannel but this one is probably my favourite. If romantic chick flicks aren't your thing then this one id for you. It exposes the highs of falling in love, the lows of falling out of it and the harsh reality of expectations that never quite live up to the dream. The soundtrack is also a winner.


The Wedding Planner. I used to watch this so much in my teen years - cringe! It's a highly predictable chick flick with some awkward scenes. If you were a teen in the naughties I'm sure you've seen all the J-Lo classics.



Legally Blonde. Can you believe I've never this film until now? My friends were gobsmacked so forced me to watch it and I'm so glad I did. Maybe next week I'll watch Legally Blonde 2.

I guess most of these are chick flicks but on a Sunday night I more or less like to switch off. How do you relax after your weekend?

My Nail Polish Collection: January Blues






My nail polish collection is getting a little excessive. A few months ago I sorted through it and got rid of any almost empty bottles, replaced dried up colours and gave away shades I didn't use. I'm still left with a mega collection so each month this year I'm going to share my favourites. I decided to split the series into categories and as it's January, I'm starting with the blues.Blue nail design

Sinful Colors are my favourite brand of polish by a mile so expect to see them featured a lot in these posts. If you're in the UK I recommend searching you're local Poundland - I'm not sure where else stocks them.

I have so many loyalty cards I'm on the search for a new large purse to hold them all but the most recent addition to my collection is the Paperchase Loyalty Card. 'Treat Me' Offers a range of benefits to card holders including free click and collect, a £5 treat on your birthday and free coffee in certain stores.

With 15% off your first purchase after signing up I've been browsing trying to decide what to treat myself too. The Flamingo notecards are cute enough to encourage me to send some letters - I'm terrible when it comes to handwritten post and will usually opt for a quick text. I'm pretty impressed with the range of stickers too. The fitness set include tick boxes to monitor things like your five a day, water intake and squats. I've previously only seen these being sold on Etsy so for a planner addict like myself, I'll be snapping a few of these up.

Recipe: Oreo Popcorn

Oreo Popcorn is the most simple snack to make and is always a crowd pleaser. If you're having a movie night or just need to use up some left over goodies you need to try this.

Start by crushing the Oreo biscuits using the end of a rolling pin (or something similar). I like to crush them into big chunks of similar size to a popcorn kernel. Pop them in a bowl with some melted chocolate and throw your popcorn in there too. All you need to do now is mix it all together. The melted chocolate helps coat the popcorn in Oreo pieces so if you need more just keep adding to the mixture until you have an even distribution.

What I'm reading: January

Every year I hope to read a book a month and every year I fail. In 2015 I read three. THREE! I'd like to make 2016 the year I stick to my plan so I've started scheduling in some dedicated reading time into my week. usually whilst waiting for my tea to cook I'll scroll endlessly through instagram or play a game on my phone. So far this year, most days I've spent this time reading. 



January's book of choice is The Selection by Kiera Cass. In the first of I believe 5 novels, America Singer is one of 35 young girls chosen to compete for Prince Maxon's love and thrust her self and her family to the top of society in a country where social mobility is practically non-existent.

I've only read a third of this book so far but I am completely hooked. America is, at least for the moment, a likable character, easy to relate to and very much a girl next door type representing the masses of under privileged girls. She's already battled between what is right for her heart and what would, at the least financially, be better for her future and her family's.

I'd love to know if you've read this series (no spoilers please) and any other book recommendations are welcome.

Learning To Run




Now I'll start with a disclaimer, I am not what I'd call 'a runner'. I am no expert and the advice you're about to read is coming from somebody who would have walked on a bed of nails to get out of running at school. I do think this gives me a pretty good understanding of how difficult it is to start running and how intimidating it can be in those first few weeks. 

When I was at uni I needed a way to exercise and clear my mind. I tried pilates and yoga helped a lot but it became clear that I needed to get out of my tiny student room and breathe in some fresh air.

I can't lie, I contemplated running in disguise in case I bumped in to people I knew but I decided to settle on a pair of sunglasses and a quick slap of my favourite bold lippie. Next, I took my trusty ancient iPod and made a running playlist. I kept my expectations fairly low and picked less than 20 minutes worth of songs. I went for something slow but encouraging to start with, some major girl power songs with a good beat in the middle (think Single Ladies by Bey and Kellis' Milkshake) and a celebratory anthem for the home stretch (Queen's We are the Champions).

For my first few runs I would power walk through each verse and jog the chorus. When you're very out of practise putting little pressure on yourself keeps you encouraged and running in intervals is great for the heart. Once I found this less challenging I'd run for a chorus and verse then power walk the next verse and repeat. Before I knew it I was running through entire songs and then my entire playlist.



Last year I got pretty lazy with my running. There was always some sort of excuse. You know the usual, too tired, too cold, too much rain, blah! So to challenge myself I signed up to a race for life. It was only 5K but I used the same method with my playlists and was super proud that I managed to successfully complete a race in a more than decent time. 

If you're taking up running this January I wish you the best of luck. I'm putting on my running shoes again after a 6 week break so maybe I'll take on a 10k this year - who knows!

How to be happy in 2016

2015 is the first year I can honestly say I've stuck to my new year's resolution. Most other year's I've probably forgotten what my goals even were by the end of January, let alone managed to stick to them. My resolution for the past 12 months was simple: Be happy. Happiness is one of those things we are all trying to achieve day in day out. Maybe sometimes we try too much to be happy that it just doesn't work out. I'm going to share with you my tips for a happy life and maybe 2016 will be a happier year for you.

Don't do things that make you unhappy. I'm not talking about refusing to wash up or take out the recycling bins but if there's certain social situations you repeatedly find yourself in that make you unhappy then have the courage to leave them. Don't feel forced to go to that house party you know you'll hate and don't go on a date with a guy you're not feeling just because a mutual friend thinks you're 'made for each other'. If we constantly live to please others we end up sacrificing our own happiness. Know where the line is between stepping outside of your safety zone and doing something you're not comfortable with. 

Be positive. Positivity breeds positivity. Sometimes it can be difficult to find a positive in a bad situation and it's all too easy to take a trip down Why Me Lane and throw a pity party for ourselves. Make your favourite motivational quote your screen saver to give you a boost throughout the day. If that doesn't work then do something positive to help somebody else. Trust me it'll make you feel better in an instant. Whether it's holding open a door for somebody, letting somebody in front of you in a queue or popping your lose change in a charity box. Small positive actions begin to make big differences.

Change. If the thing that makes you most unhappy is your job, relationship or housing situation then don't forget you can change it. Never be afraid of cutting out toxic friendships or habits that no longer fit who you are. There are certain things in life that can only be controlled by ourselves. I like to write down a long term goal for the change I'd like to make and then break it down in to smaller more achievable aims I can fit into my evening after work. Those small changes lead to big ones.

Appreciate. Just like positive thinking, happiness comes from an appreciation of what you have rather than the desire for things you don't. I could sit here all day making wish list after wish list filled with fancy handbags, cute clothes and Disney tsum tsums I don't need and then cry myself to sleep because once again I'll be taking my £10 Primark backpack to work rather than my mush lusted after Mulberry dream bag. At the end of each week or month take some time to think about five things your thankful for. Share them on your blog or on twitter or just make a note of them in your journal or planner. We have so much to be thankful for - our home no matter how small, the NHS no matter how long we have to wait for an appointment and that delicious packet of Oreos we treat ourselves to after a bad day at work. You know that old saying, happiness is a journey, not a destination. It's okay if you're not 100% happy 100% of the time, some days I'm just grateful for Netflix but hey, that's okay.

I'll start here with 5 things from the Christmas period I'm grateful for:

-My family for making every Christmas special without fail
-The NHS paramedics that came to my rescue after I got hit by a car the week before Christmas
-My best friends who helped me with my last minute shopping by driving me around and carrying my bags
-Pigs in blankets
-Friends from afar who take time to send gifts and well wishes

2016 Blog Goals

I've been taking blogging much more seriously of late and with the New Year approaching I've come to realise that most of my goals for 2016 were blog related ones. If I get them written down on here I'll be able to keep good track of where I'm at and revisit this post throughout the year to record my progress.



1Purchase my own domain. I'm pretty nervous about this one, I need to do more research into moving over from blogger and which domain hosts are the best. If you've any tips please let me know.

2Streamline my content. Now I'm used to blogging I know what posts I enjoy creating and which are most well received. Focusing my posts in certain topics will improve my continuity and provide prompts when I'm struggling for post ideas.

3Redesign. I love my layout from Pipdig but I'm planning a relaunch once I've sorted my own domain. I want it to be 100% perfect so it's not something I'm going to rush but I've got a few design ideas floating round in my mind.

4Improve photography. I feel like the quality of my images were getting much better during the summer but longer working hours and dark nights have really left me struggling.

5Invest in some equipment. Following on from my last point, I'd like to invest in a light box and tripod this year. I don't need anything expensive, just something that'll help me along the way.

6Rewrite old posts. I've read so much about improving old posts and promoting them again. It seems like a great idea for those posts I wrote when I'd just begun.

7Hold a giveaway. I'm big into comping and enter as many as I can. I'd love to be on the other side, hosting my own giveaway. I might do this when I reach a milestone or to celebrate my relaunch.

8Advertise on another blog for a month. When I'm happy with my blog and content I'd love to purchase an advertising spot on a blog with with readers who would potentially be interested in my content. I'll only do this when I have good quality posts scheduled and I'm happy with what I have to offer.

9Get to grips with SEO. I know very little and I've been learning as I go, picking up a few tips here and there. The beauty of the internet is that it's full of resources that allow you to become an expert at pretty much anything so I'm going to get my study on and become a pro.. or at least competent in SEO. 

10Host a Twitter chat. I love the idea of hosting a chat but I need to gain way more blogging confidence first. This is definitely a goal for the latter half of 2016.

11Expand to YouTube. I love craft and DIY but have struggled to find a format I like for these types of blog posts. YT might be a better option for me so maybe (and it's a pretty big maybe)I'll venture in to a whole new world.

12Write more personal posts. I'm always a bit conscious of putting myself out there and I've got a few draft posts I'm wary of publishing. I'm just going to bite the bullet and do it.

13Comment on more blogs. So often I'll read posts on my iPhone or iPad when I'm on the go and never end up commenting. I need to show more appreciation so I'm going to make the effort to share the love.

14Get ahead. I tend to be about a 2/3 days ahead with my posts. Usually on a Sunday I'll draft my posts for the week and take photos when I can. I tend to leave the final edit until the last minute though and this never makes for my best content. Ideally I'd like to be a week ahead at all times meaning if any emergencies come up or I'll be on top of my blog.

15Plan. To help me get ahead I'm going to start planning dedicated blog times each week. I plan my personal life thoroughly but I can be a bit lax when it comes to blog planning. Dedicated times will help me focus and will stop other things taking over.

16Post daily for a month. I felt a tremendous amount of disappointment in myself when I couldn't complete Blogmas as I was so on track and doing really well. My creativity was flowing and I was getting great feedback. I want to blog daily for a month in 2016 but I'm not sure when. I don't fancy waiting until next December though!

What I got For Christmas 2015

After a pretty scary start to the festive season, my Christmas turned out really well. My family loved the gifts I'd bought them for each of them, I ate an ungodly amount of food and I got to spend my favourite time of year with the people I love. I was also extra lucky with the gifts I received this year. Most of them are pictured below - what isn't pictured is the stocking full of chocolates and sweets I'm making my way through as I type this post. I've almost polished off a box of toffee poppets and I'm making my way through a Thorntons' chocolate reindeer. Yep, I'm switching between the two whilst watching movies!

What i got for christmas bbloggers

Just look at all those Benefits mini's! My parent's bout me a gift set and my BFF filled a Benefit stocking for me. I got my second ever Ciate advent calendar and once again wasn't disappointed. How awesome is the mermaid cosmetic pouch? I'm obsessed!

Stationery gift ideas

I'm a bit of a stationery addict so I always welcome new notebooks and such. I'm off to New York next year (61 days) so the travel journal, colouring book and map were all given with my trip in mind. As an organising freak I'll put the magnetic list notepad and weekly organiser to use along with the new additions to my planner stickers collection. Let's just take a moment to appreciate the pencils. You can't quite make it out but they say 'Living for naps and Netflix'. Yes yes yes!

My mum admitted that most of my Disney gifts she first saw on the Disney Find instagram account. I'm most excited about the collection of 90's snow globes that my mum tracked down. I shared a photo of my Cinderella watch on Christmas day and everybody seems to love it just as much as I do. You can check out the close up pic here.

Homeware bits excite me just as much as anything. On the bottom left is a face towel in the same design as my weekly organiser and bottom right is the cutest tea towel I have ever, ever seen!Candles and lights are just what I need in my room right now and everybody needs a calendar, right? I received the Everton FC calendar with the players in some cheeky poses all in the good name of charity. It's a win win as far as I'm concerned.

Finally, I received John Bishop DVD and the Grinch after losing my copy when moving house this year. I've wanted the Mad Men box set for month now and when I saw t on a super cheap deal on black Friday I did the right thing and emailed the link to Father Christmas. I'm saving it for the New Year - I think it'll brighten up those boring January nights after work. Oh and what's that? Yep, just a signed Pretty Little Liars' script.
